Carb Tracker for Gina's Journal, 25 April 2013

HMMMM. pop up? or just a natural correction? maybe it was that dadgum aspartame in the sf jello. Making my own, starting TODAY! with truvia or stevia or maybe some of each so I can tell what's going on. Looking back at my diet calendar, maybe my daily calorie is too high. OR it could be the MIM I ate yesterday.....yum. I had half (I made it in a 4 inch pyrex then sliced like a bun) toasted with my brunch and then I had the OTHER half, covered in one ounce of extra sharp cheddar cheese (less than 1 carb per ounce)toasted in the oven for an extra delicious snack.
Well, I had to do my 4 miles by myself this morning with nothing to distract me but the ramblings in my own head and the slap, slap, slap of my feet as I tried to keep my pace.... but.
Pondering things in general someone asked yesterday what I "missed" the most. I said quite honestly that trying to pay attention to what I'm supposed to eat didn't leave a lot of time to figure out what I "missed". But, today I have decided. The ONE absolute thing that would make Atkins for me virtually indistinguishable from my preAtkins days is......<drumroll please> GRAVY!!!
Yes, there it is, in black and white, plain old ordinary gravy. Then I realize that the key element to gravy that makes it unAtkins is the binding agent, flour. Now, gravy doesn't just mean "gravy" it can also mean "sauce". Not that I eat catsup, actually I hate it, but for someone who DID you could take tomato boullion, water, some minimal sweetener and blend it with a little
flour substitute and have I believe a passable, low carb sub for catsup.... but for me, I was thinking pork chops in pan gravy, swiss steak, beef stroganoff, sheesh there have to be a million. In all my years of Atkins I've never subscribed to "diet" foods. Just recently I started using SF Jello, only to find that the aspartame is killing me. But, I saw somewhere while perusing the web the awesome claim of OMG Atkins friendly "biscuit AND gravy". Intrigued, I had to look. Evidently, in the last 25 years, lots of people have developed low carb subs. I knew this of course, when I found Mission's Carb Balance flour tortilla (which I bought two months ago and have had ONE).
I had one shrimp taco with lettuce, shrimp and sour cream for a total net carb of <5. It was very good. I'm sure as long as they continue to market them, I will use them routinely AFTER I reach my goal, and as for an occasional taco until then. I digress... back to the biscuit and gravy. SO., I looked it up. Sure enough, there was Carbquick to the rescue. I can't find any locally, and I'm not sure that I want to pay to ship it here. But, I'm thinking of many things in which a Bisquick sub would be magnificent and realistically low carb.
It is a nice thought though, to realize that perhaps I've not lost biscuits and gravy as a permanent item, just temporarily suspended them until I can define a healthier version for me...... wow...what a day!
