Carbs, protein and exercise

I’m 62 and at goal weight but am concerned about loss of muscle mass at an unacceptable level. I do strengthening exercises in the early AM and do not eat breakfast until late morning because I’m not hungry until then. Nutritionist advises I need carbs and protein 30 minutes prior to and after exercise and suggested peanut butter. I’m having trouble getting past the fat and calories in PB, not to mention it sounds disgusting for a 4:30 AM snack. Suggestions? Has to be easy though, because, well it’s gonna be 4:3O AM. Thanks FS friends.

Cottage cheese?
Overnight oats with protein yogurt?
Protein drinks with berries or greens

Thanks. The last two would be doable and I could probably actually enjoy those.
