Recently lost 65lb on Keto and gained it all back.
I really liked the diet but found it difficult to cook for hubby. He was ALWAYS hungry on the food and could not get into ketosis.
So we are trying a plant based diet with a vegan twist for me.

I am super excited to dive into this kind of eating. Any recipes that have worked for others?

Hi Anniemaxx, My go to weekly soup is my carrot soup. I eat it for lunch nearly everyday. You can make either creamy with skim milk or boil the carrots in low salt chicken broth. I bag of carrots (peeled cut) in water or broth just to cover carrots, 3 cloves fresh garlic crushed and added to carrots boil until carrots are soft. Use an immersion mixer to puree carrots in broth, (or milk) add pepper, chives or whatever your tastes are reheat and eat & enjoy!!

I had found one recipe that uses sweet potatoes along with carrots. I thought it was quite yummy. Of course, the guys in my house turned up their noses.
