Are we able to eat couscous on phase 2 of the south beach diet? I really don't like brown rice, so hopefully we can.

According to the excellent The South Beach Diet: Good Fats Good Carbs Guide by Arthur Agatston (Amazon from $2.00) couscous, on Phase 2, gets a (G)ood rating. Foods termed (G)ood may be eaten regularly. So, I'm happy to say that it seems that you are in luck SpoiledPixie!

The index could be a bit more thorough but it's pretty good. They put couscous under Grains. BTW, in case you haven't already tried it, the Starbuck's White Chicken Curry w/Couscous is great for a lunch on the run, and I think it fits fairly well into Phase 2. I need to find a copycat recipe for it on the web. Smile
