How many MIMs do you allow yourself per day? I think I may eat too many of them but I am sick of salad. Also, my blood sugar is way down which is one of my main goals. Thanks for any input/advice in advance. Smile Karen

Are you talking about "muffins in a mug"? If so, I've never made any as I am afraid I will like TOO much. Do you log and track everything? Do they fit into your day's total?

Yes, I am talking about muffins in a mug. They really fill me up and I don't eat more than 3 a day (3 meals, mostly 2). I track them and fit into my daily totals.

They are pretty high calorie content. Don't go overboard with them. I generally only have one a day but mine are larger than standard. I also make mine with a combination of flax and almond flour. 2 tbs of each but only 1 egg. Around 450 calories.

Thanks, jlbenitz - Since I restarted Monday I have been expanding my eating and not just limiting it to the MIMs. It was a good way for me to start though. They fill me up and I don't want the other food. My blood sugar was 94 after eating a Whataburger without a bun and my pants are already very loose. Thanks again. Smile

never heard of MIMs, if it is just egg in a cup then it is low in calories and carbs. My breakfast today was grilled mushrooms (giant sized) with a poached egg on top. Very filling.

I have just found out what a MIM is, omg that sounds disgusting. How can you eat that 3 times a day. Why are you having salad on a low carb diet there are so many wonderful things to eat. Off I go now to have my grilled chicken with grill asparagus and red pepper. Not a lettuce leaf in sight.

I ate a wonderful breakfast this morning and had a MIM for lunch. I like them so sue me if you don't. They help me. Not sure what I'll have for dinner. I don't cook much and my husband has been sick. He usually cooks the meat at our house. Plus I am on a tight budget and MIMs are cheap to make. I thank all of you for your input. I am glad to be in check with my blood sugar and have lost 6 pounds since Monday. Smile

Actually I was looking for input and advice. I have (sort of) got back on track. I think I should limit the MIM to 1 per day. I do appreciate everyone on fatsecret. Thanks again.

I love mims too Karen. I have one in the morning every now and then for breakfast. I like to toast em in the toaster oven and add cream cheese to the top or add in blueberries.. I know there are some zucchini and pumpkin variations too..

In a small bowl (12 oz. Styrofoam) I use 3 rounded teaspoons ground flax seed, either (1 tsp. cocoa, cinnamon, or pumpkin spice), lo-cal sweetener to taste, and 1/4 tsp. baking powder. Stir all dry ingredients. Then add 1 egg, 1 tsp canola oil, and 1 tsp Torani sugar-free syrup either (vanilla, French vanilla, or caramel). Stir until it makes bubbles. Cook in the microwave for 1 min 15 sec. I really like them. They are cake like this way. There are many recipes out there but this is how I eat them.

I changed the recipe to rounded teaspoons of ground flax seed. Kroger has this on sale for $2.04 right now. Also, be sure to stir well. It will bubble after stirring. I hope you like them.
PS - I ate salad today and enjoyed it. I am still on track.

Welcome Bobbi!

You will do well. Having the guts to start this diet as we head into the holidays proves it. Most people would say they'll do it after the holidays! I have lost 23 lbs since October 10 on a low carb/high protein diet. I hope to lose 10 more by Jan 13.

I don't eat MiM's, but, if I did, I wouldn't eat more than one a day.

My breakfast today: omelet with sausage, spinach and jarlsberg cheese and coffee (under 4 carbs)

Same here, my breakfasts sound similar to yours. I have found that if I do not have eggs on a day, it's hard to keep my numbers in check (either too much carb or protein or too little fat on the KETO diet). Breakfast today (when I eat) will be a tablespoon of onion sauteed in a tablespoon of butter, then 1/2 a can of salmon heated in the onion-butter, then 2 eggs scrambled into that--all topped off with Louisiana Hot Sauce. What are MiMs anyway?
