how about a breakfast quich. Mix together your choice of meats.. bacon, sausage, ham, with cheese and alot of eggs. Bake in the oven till the eggs are done. You can scoop out some every morning. Heat in the microwave and add alittle sour cream to the top if you would like.

You can also put in Green Pepper if you wish too.

You can make these quich's in mini muffin tins in advance, keep in the frig, and they work great. great idea WolffMama.
Another thing i do is Turkey bacon, take 2 min and 15 sec in the microwave and you have 4 peices of crunchy bacon. and a couple slices of cheese. Quick and filling.

I like yogurt(low fat) and fruit for breakfast. Have to agree with the breakfast muffins(thats what I call them) above. The recipe is called Egg and Sausage Muffins. I have found that you can put almost anything in them. Yummy! Very Happy

I like to make myself a egg and cheese omlet every day. I mix up the egg, cook it really thin like a crepe, sprinkle on the cheese ( you can also put any veggies or meat) and then roll it up. Sometimes I make them the night before and they heat up in the microwave in about 30 seconds the next morning. I have also done the muffin cups. I also find that soup makes a good breakfast. I learned that from my asian roommate in college.

Love the food that loves you back.

I know it really isn't on "Induction" but I'd just grab a low carb shake (1-2 carbs) or a low carb bar (2-3 carbs) ... the only time it would take would be the time opening the can or wrapper, lolVery Happy

I'm a big fan of string cheese and lunch meat. I know it sounds weird, but super easy to eat on the go and really fast. I usually have 4 pieces of ham, and roll each piece around a "string" of the cheese. It's yummy.

I made a batch of those sausage cheese balls and froze them. I'll get out a few and warm them in the microwave when I'm in a rush. When I have the time I love scrambled eggs with chopped ham and cheddar cheese.

Atkins Breakfast Idea

This is similar to the breakfast quiche idea... I've been mixing (the egg beater equivalent of) 8 eggs, cheese, and vegetables in a 9x11 baking dish and baking at 350 degrees for about 40 minutes on Sunday night. Then I slice it into 6 servings and put each serving in an individual container. I grab one from the fridge every morning and heat it in the microwave for a minute or two.

You can mix it up and use different ingredients each time; some easy combos:

- Eggs, cubed ham, package of frozen broccoli, tomato, and cheddar
- Eggs, can of artichokes, package of frozen spinach, and cheddar
- Eggs, package of frozen spinach, and feta cheese

*It's also good with salsa on top*

Why egg beaters? Just out of curiosity. You can have regular eggs on Atkins, they have a lot of "good fat" and "good cholesterol" that combats the bad cholesterol. Very Happy I love eggs!

I recently read that if you get farm raised, grass fed (hens) organic eggs they can actually compete with Salmon for the amount of omega3 (good fat). They can be awesome for you but the CAFO ones aren't as healthy so maybe it's good to pay a bit more for the organic (and local if you can) ones -- should be a wash if your usually buying egg beaters which are expensive.

Yea, I only buy organic, cage-free eggs. It is worth the extra cost when they have so many health benefits. Plus, I can tell a difference in the taste of local eggs, I get them locally whenever I can. Very Happy

the atkins shakes are great for breakfast, if you put them in the freezer for about an hour they are just like an ice cream shake. Certain cheeses are great and why not have hard boiled eggs, you can make them ahead of time. I am an eat on the run person too in the am. it only takes a few minutes to throw breakfast together, your body will thank you the rest of the day.lol

smoked salmon is a lovely breakfast alternative! have with some cut up egg, capers, cheese crackers (made homemade with cheese)

Also, (not induction though) the low carb josephs protein wraps (5 g of carbs) with hummus (not a whole lot) and veggies, or cooked as a quesadilla with chicken and veggies and salsa....that is healthy with 5 carbs for the wrap and then whatever you add. you could have that more as a treat, rather than every day. All the Josephs low carb wraps and pitas are great!!!
