I'm on the road from 6am-6pm every day and struggle with my diet

I work as a Driver for a pharmaceuticals company. I'm 21 and I need to take my diet more into my own hands and not be lazy.

I do try to eat healthily and the best I've come up with so far is
Breakfast - Smoked Salmon and light Philadelphia bagel (I eat my breakfast whilst I drive)
Lunch - Pasta or salad (lunch is pretty good because I get to stop for a while)
Dinner is always something random but my mum does cook balanced meals and I'm not eating crap.
I would like to be able to make myself something easy like rice and chicken after the gym so I don't have to plan my gym around when she cooks for me.

The thing I struggle with is if I plan on going to the gym after work I feel like I need something else to eat on the 1.5hr long drive home. Otherwise I don't perform as well as I think I could and just feel hungry.

So my 3 questions are
Any good on the go breakfast ideas?
What should I snack on when I'm driving home?
What is a nice cheap, very healthy meal I can make quickly myself after the gym?

Do you get any exercise?? I use to be an OTR driver, my doctor told me what ever it takes to stop at a rest area and walk around the whole area then get back in my truck and drive at least every 4 hours.Smile

Yeah, once I'm in the town where I'm delivering to, I'm constantly in and out the fan and it is pretty exhausting. I also go to the gym 3-4 times a week after work

Maybe I am not the best to give advice but have you tried things like a protein shake? I usually find that if I combine a protein shake with a couple of hardboiled eggs, I am usually good for a few hours. Smile

How about a nutrition bar of some kind before the gym? Or a banana with some peanut butter on it? When I am tired and want a healthy, quick meal, I make an egg scramble loaded with veggies.

What about carrot, celery, apple slices, low fat cheese. Something healthy that you can pack in a small cooler in your vehicle that is handy and precut ready to eat on the go.
