You're consuming more cals than you think.
As spacey says, measure everything and measure properly. Oils and cooking oils count in their entirety, so measure in tbsps.
You may also try and ditch sodas and alcohol. Be careful with fruit juices, they're packed with cals.

Use a measuring cup, measuring spoons, and get a digital scale, and read the label on food before you serve it. Some brands are much higher calorie than others. I try and match the food choices to be the same calories as what I'm eating if I can't find the exact match. No eating without writing it down, you'd be surprised how much you can eat just by tasting. Good luck and be patient.

Consume whatever foods you prefer, whenever you prefer to consume them, while ensuring nutrient sufficiency and meeting caloric goals.

It isn't always not measuring correctly, I can drop to a 500-1000 cal/day diet and during an episode of my condition, I will still continue to gain weight as my body slips into a starvation mode that is part of the condition. Unfortunately, at this time there is not a treatment for my condition, but there are treatments for many other conditions. I wish you luck on your journey.
