Any spinach salad dressing ideas?

I ate out at BOb Evans today and they have an awesome spinach salad. It comes with yummy hot bacon mustard dressing, which I had to forgo in phase I of SBD (well I kinda did). Does anyone know of a sweet/sour dressing that would be acceptable in phase I for a spinach salad? I was thinkng maybe a turkey bacon/splenda/mustard combo, but was not sure of the base. Any ideas?? also what are your takes on olives, capers, and
pickles?

I just took out a Rachael Ray cook book from the library & she has a spinach salad recipe in there with diced up chicken breast. The dressing is made with 2T extra virgin olive oil, 2T Dijon mustard, 2 chopped up cloves of garlic, some capers, & salt & black pepper to taste. It sounded very yummy to me. Of course it's not sweet though. I love the hot bacon dressing myself but have not found a SBD friendly recipe.
If your health is good preserve it. If it's not...FIX IT!!

It may be different than what you are looking for, but this is a great spinach salad dressing: 1/2 cup mayonnaise, 1/4 cup 1% or skim milk, 1/4 cup splenda (or to your own taste), 2 tablespoons vinegar, 2 tablespoons poppy seeds. The full salad is 18 oz of baby spinach, 1 pint sliced fresh strawberries, 1/2 red onion, then toss the dressing just before serving. You'll need to hold the stawberries until Phase 2. I know it sounds odd, but this makes a great salad and great dressing.

Thanks for the great ideas! I will try them both. I recently discovered capers and love them, expecially with fish dishes. I have tried a spinach and fruit salad before and it was great. I will try to mix a dressing with low fat mayo, vinegar, splenda, and either poppy or sesame seeds and see how it turns out. Maybe add a bit of crumbled turkey bacon and mustard, just to try to replicate my old fave hot bacon mustard dressing into a not-so-evil step-sister.Smile

I just learned a mock honey mustard dressing that I tried today and is great!
The portions of the ingredients were as posted on the site I found, you can adjust as you like, and you could add the turkey bacon to it or just to the salad itself.

1 cup lite mayo
1/3 cup mustard
2 tbsp lemon juice
1 packet of splenda

( I actually cut this down and still used to whole splenda packet for extra sweetness)

Can you have Raspberry Vinigrette(sp?)? Kraft has a calorie wise version or there are a couple brands of non-calorie wise. I love it on spinach!

hi i just wanted to let you know if you didnt .. that wish bone makes that spray salad dressing . They have a rasp. vinegrette too i believe. You get about 10 sprays for like 10 calories or something ..just a thought .Some people dont like it , but i do . Good luck !!Very Happy

Here's a great fruit vinegarette salad dressing to make. In a blender, put 2 heaping tablespoons of any flavor of sugar free preserves (I either use Smucker's Orange Marmalade or Sugar free raspberry) add an equal amount of cider vinegar and blend!!
As an option:
You can add a small drizzel of good olive oil.
This is sugar free and my husband loves it!Smile

My family loves the simple dressing I make. 2 ounces Balsamic Vinegar, 2 ounces olive oil, 1/2 teaspoon Roasted peppers and Garlic seasoning from club house. Mix well put on salad. I also put fresh browned bacon, mushrooms, and sliced boiled eggs in.
