Egg Muffins with Turkey Sausage

Easy, healthy, quick egg muffins. Great for healthy breakfasts all week.

Ingredients

Directions

  1. Crack eggs into large bowl and beat. Set aside.
  2. Cook sausage until done.
  3. Shred sweet potato into "hash browns" and saute with spinach.
  4. Add cooked sausage, sweet potato, spinach, salt and pepper to bowl with beaten eggs and mix well.
  5. Scoop mixture into greased muffin pan filling cups 3/4 full. Cook until eggs are completely done, approximately 20 minutes.
