I am 28 years old and I live in Jesup, Ga. I am married to the most wonderful and supportive husband I could ever pray for. We have a 16 month old daughter and are active in our spiritual lives. We count on God for most everything and eachother all the other times....I have gained a total of 145 pounds over the last ten years, 60 of the pounds were after I gave birth to my daughter....I am struggling, but with the support of my family and friends that are going through some of the same things, I know I can do this....I'm not ready to die.

New recipes!!
I don't know about alot of you, but before I started dieting and almost since I could reach the stove I have loved to cook and make up recipes....My hubby loves to eat and is not picky so he has been getting really excited about some of the things I have been introducing to our dinner table these past few weeks....I am not going to post these as new recipes yet because we are the only ones that have tasted them....one problem me and husband have is that he does not eat pork products of any kind and on this diet Pork rinds are a very simple substitue for alot of things...let me tell you about a few of the things we have been doing to avoid pork, whether you don't eat or your sick of it, try these out....the other night I wanted to make meatloaf and in almost all the recipes I checked out it said to use pork rinds, well...instead of porkrinds I took an onion and a bell pepper and five soda crakers and blended them in the food processor until like a paste of liquid....that was my glue for my loaf(i know these have carbs, but when you eat a serving it ended up being like less than 1 carb due to the craker)oh...I used two pounds of hamburger or ground turkey is good too), not only that but I added low carb ketchup, a little salt and pepper, 2 eggs, and seasonings that we prefer, you could use whatever you wanted too....It was the BEST meatloaf we had eaten in a long time....also...I made a squash casserole one day(for those of you from the south) instead of bread crumbs or crakers I grinded up cashew nuts in the processor until very fine like bread crumbs...YUMMY!! (if you are not familiar with squash casserole, write me and I will drop you my recipe, it's a very filling and rich dish that goes good with meats....mmm!...Tonight me and my husband and daughter are having BBQ chicken with my low carb BBQ sauce...I think I may have Perfected it!....lemme know if you want that one too....this is beginning to get very exciting girls!...not only are we losing weight, but we are eating delicious food....I will post more recipes as we experiment...
OH BTW...for those of you who have bad sweet tooths like me, I buy decaf coffee, sugar free caramel syrup, heavy whipping cream, and splenda...ok...
Make your coffee like you normally would, add you a little caramel syrup, some cream, and then while your coffee is brewing, mix you up some homeade whip cream with splenda and a dash of vanilla....put you a little dollop or A BIG ONE...BUT IT IS sooo good!
