Hi, everyone! Hope you are well. I bought coconut oil and put it in my coffee, but most days I forget to add it. I can remember years ago when US experts were telling us not to buy any processed food that contained coconut oil because they said it was unhealthy. Said not to eat any fats that were hard at room temperature or something like that. Why are we putting coconut oil in our coffee? I could google it, but if we discuss it here, it would help us all. Shrimp 'n Slaw Marinara

Skip the pasta -- this saucy seafood dish will kick noodle cravings to the curb... for a fraction of the carbs and calories! Prep: 5 minutes Cook: 15 minutes. MAKES 1 SERVING

Ingredients:
One 12-oz. bag (4 cups) broccoli cole slaw
1/2 cup low-fat marinara sauce
4 oz. ready-to-eat shrimp
Seasonings: garlic powder, onion powder, red pepper flakes

Directions:
Bring a large skillet sprayed with nonstick spray to medium-high heat. Add broccoli slaw and 1/2 cup water.
Cover and cook until fully softened, about 10 minutes. Uncover and, if needed, cook and stir until water has evaporated, 2 - 3 minutes.

Add marinara sauce and shrimp. Cook and stir until hot and well mixed, about 2 minutes. Season to taste!

Alternative: Steam your slaw by microwaving it right in the bag, if the package says it can be done. Then transfer to a microwave-safe bowl. Stir in marinara sauce and shrimp. Microwave for 2 minutes, or until hot and well mixed. Season to taste!

Hello, everyone! Thanks for supporting and commenting on my journals. For the new people here, I was diabetic with high cholesterol and high blood pressure. I started watching what I eat and walking every day. It was slow, losing about five pounds a month. About three months after I joined FS, I started to increase my fiber (25-40 grams a day) and increase my protein (46-90 grams a day). This helped me a lot in my weight loss journey. My doctor stopped the diabetes pill because my blood sugar became normal and he cut my cholesterol pill in half. I kept walking and eating right and my doc stopped the cholesterol pill. I'm still on the high blood pressure pill, because my doctor says I need it. I'm at my goal weight and so happy about it. I told everyone I was going to get a smoothie maker or a blender as a reward when I reach my goal weight. I bought myself a "Mother's Ring" which has a different birthstone for each one of my kids. It was something I always wanted to get, but they didn't make this ring in size 12. Now I weigh the same as I did when I got married and I bought the ring in size 9. I don't wear it every day but on special occasions. I'm saving my money again and I'm going to buy the smoothie maker or blender. Life is good. You must make a plan and stick with it. Be consistent and you will reach your goal!
