I'm not eating nearly enough vegetables for the Nutritarian diet. I don't like cooking, and it requires half the veggies to be cooked. Maybe I'll switch to some kind of lacto-ovo vegetarian. I'm not going to spend my free time in the kitchen steaming or stir frying. I'd rather eat raw veggies with canned beans, tofu and tortillas, plus a little fruit.

I don't think you need to switch diets because you don't want to eat cooked vegetables. My interpretation of Dr. Fuhrman's guidance is to eat ONLY half of vegetables cooked, in other words, he doesn't want you to eat too many cooked vegetables otherwise the nutrients are lost. Eating raw fruits and vegetables is ideal, but most people prefer cooked vegetables, especially in cold climates. It might be in your best interest to see how far this diet takes you. Yyou've lost 9 lbs in one week! You must be doing something right to lose weight when it appears you struggled before. Give yourself some credit for your accomplishments.
