Admittedly, not my best week in terms of focusing on my health. I ate a little too much and I'm still not getting out and exercising. I'm not sure what is keeping me from it, but it has to stop. Thankfully, I didn't gain this week.

As for everything else, I'm doing great. Right now I'm a little bogged down with a pile of homework, but I'm getting A's on all my assignments, so all the studying is paying off. I'm single so Valentine's day was a bit depressing. Usually I spend it with my son, but he was at his mom's and then he had a birthday party to go to in the afternoon. Instead of dwelling, I cooked. I'm trying to re-create a yummy Arroz con Pollo dish that is made by a local restaurant, but I need to bring the calories and fat down on it. It's an unbelievably greasy dish (pools of oil) so it needs work. I did that and studied. Made for a good day in the end because I did learn a lot about cooking that particular dish.

I hope you have all had a great week and a wonderful holiday weekend.

7 Things I'm Grateful For:

1. Appliances - When I think about having to cook over a fire (which I've done when camping) or having to salt all my meat because I don't have a fridge -I cringe. My stove, microwave, refrigerator, and especially my dishwasher are such wonderful friends.

2. Reading time - Every night my son and I sit down to read. I read to him and he reads to me. We spend about a half hour or so doing this. It's been such a huge blessing in my life. When my son first came to live with me, he was six and was just coming out of an abusive household. He was uncomfortable around me, a stranger. I started reading to him every night, as a way to break the tension. When we first started, he sat as far away from me as he could get on the other side of the room. As time when on and the more he got to know me he slowly inched closer. Within a few months he was sitting on the arm rest next to me and starting to learn to read himself. Take the time to read to your kids.

3. Mouse - I'm referring to computer mice. Although a mousepad on a laptop is handy, a mouse is just so much easier.

4. Valentine's Day - Although I'm single and don't have anyone romantic to give a card too, I did get some chocolate for my son and he got me a card. It was very sweet.

5. Kid's TV - I'm 31 years old and I still enjoying watching a kids TV show every once in a while. They are always more extravagant, goofy and crazy compared to my adult shows. It's nice to sit down and laugh and giggle at innocent and fun loving jokes.

6. Shoes - I'm a clothes shopper, that includes accessories and shoes. I'm in need of a few pairs of shoes and it's been so much fun this week looking.

7. Love - "Love bears all things, believes all things, hopes all things, endures all things. Love never ends." 1 Corinthians 13: 7-8a

WOW our lives have so much in common, the little one i'm minding was also my foster child, her mum was away collecting her son from her home country. mum not interested in daughter but adores son, so care for her on and off. Shoe's I adore and I've loads. I also agree bout reading, our little one has lots of problems with matching things up, bucket to spade etc. things like that so only today school wants her go therapy to help her. life so unfair for some kids,
