I hate it when that happens! And believe me, it's been happening...
When I get discouraged, I ask myself, what's the alternative? Go off my diet and gain weight? No thanks! =) When I'm in it for the long haul, I am grateful for every pound (or fraction thereof) that goes away and STAYS away.
I think we just have to keep learning and adjusting based on what we learn. If one diet doesn't work, try another. Eventually you will find what works for you. It's just discouragingly slow for some of us.
Beyond that...it's so important to not be a perfectionist. To quote one of my favorite articles: Don't worry about losing a battle now and then; concentrate on winning the war!

One of the most important parts about weight loss is that you need to keep realistic expectations. People who lose big the first weeks are carrying a lot of water weight. So those two pounds are more likely fat loss. Take out 8 sticks of butter and that is what two pounds of fat would look like. That's pretty great. All those smaller loss's lead up to your goal weight. Patience and persistence will get you there. You are doing great.
