Went to the farmers market and got an eggplant for 85 cents. What a deal! Hubby fixed it with tomato meat sauce last night. That was just what I was in the mood for. It's a pretty good substitute for spaghetti night, even without cheese on it. I don't think I could eat two big plates of spaghetti with meat sauce like I used to.
The weather is cooling down ever so slightly with a little drop in the humidity. Almost tolerable, but I'm still sweaty. Still busy trying to get a lot of work wrapped up before the trip. I'm gonna try to keep posting and recording what I eat though.

You have to love eggplant. I have a great recipe I need to look up. It is eggplant in a peanut-garlic-plum sauce. AWSOME!!! The original recipe was way to garlicky for me. Even so, the peanut-plum flavor was amazing. When I find it I will share it.

I have not been brave enough to try egg plant yet. I'm still in the honeymoon phase with my summer squash, lol. Then I thought I'd move on to zuchinni, but I'm not sure. What does egg plant flavor compare to?

lol, that is what I have been having lately, Fresh grown tomatoes, zucchini, onion, corn whatever is fresh, stewed up. I add turkey, hamburger, adele sausage, or eat it plain. MMMMMMMM... fresh is good! TOWANDA!
