Another experiment for the books:
After work on Tuesday, when my wrist hurt so badly, I decided to splurge and stop for Chinese food, knowing full well I wouldn't be able to cook for myself. Since I had had rice with Mexican food the week before with no jump in weight, I went ahead and got the fried rice that came with the combo. The meal 'fit my macros' (IIFYM), and was my one meal for the day. Yeahhhh, NOPE! Over the last 3 days, I've gained 4 lbs.
So, what's the difference?
With the Mexican, I had beans...slow carbs, lots of fiber. I remember seeing several LCHF speakers talking about how fiber slows digestion of carbs, and prevents a big release of glycogen. With the Chinese, I had broccoli, which has some fiber, but not enough to offset the rice.
I'm not overly concerned about the bump in weight. I know it will come off.
The next experiment will be with brown rice.
I think it was Dr. Fung who was explaining how most foods, in their natural states, have protections built in..like the husks of rice adding the protective fiber, and the pulp of fruit giving the fibrous protection from the natural sugars. By polishing the rice, or juicing the fruit, we remove the protection that Nature built in. Which leads me to wonder if adding Metamucil or other fiber supplement when eating something like white rice would do the same thing.
Reason tells me that it should, but also says, "Hey, dummy! Just get foods as close to the way Nature produced them, as you can!"
My wrist is much better today, so I'm going back to work. It will be a long day, but I plan on wearing the brace as much as possible, and babying it when I can't wear it.
I'm thankful to have understanding clients, work that I love, and a body that heals quickly.

What a away to start the day with gratitude! 💖 I have the same love/hate relationship with rice. Gosh... I could eat it at every meal, every day. I went through the same thought process using Dr. Fung's logic, and did the exact same experiment. It seemed that the brown rice & extra fiber did not effect me AS BAD as white rice with little fiber. Then again, I may as well eat a chocolate bar as to eat white rice with little fiber. Good luck with your experiment! 😚

Thanks, C2B! I never thought I would miss rice as much as bread and pasta, but I do. But it looks like I'll have to put it in the same 'poison' category. Interesting to note, though, that the fried rice didn't knock me out of ketosis. But I'll bet it caused a huge insulin spike. Have you looked into the insulin index at all? Things that are low in the glycemic index are sometimes low on the insulin index.

I knew it would be my main problem. Oh, no. Please do your own experiment! You may have different results. I'd be interested in hearing about it. Hmmmm.... no, I haven't at all. I will check into it though. Thanks for sharing! ☺

Interesting that the fried rice didn't knock you out of keto. I have heard that once you are fully adapted that you can "hide" carbs with a blanket of fat to maintain ketosis, but never did a real experiment there.

Maybe that was it..the fried rice WAS greasy! Re: the insulin index (II), it's pretty interesting, but far from comprehensive, being that it's still pretty new science. But it's interesting to note that white rice is very high (right up there with cookie dough!), while brown rice is lower, even, than white fish! So are navy beans.

Hmmmm... sounds very interesting! I do sometimes test my blood glucose (when on strict LC) to see what's going on there, but after learning about insulin I know that insulin response is an even better indicator. I will check into it more. Thanks again for sharing, sis! xoxo

Also -- consider that Chinese food is terribly high sodium. I always gain weight for a day when I eat it. I suspect it's more likely that was the problem. I use quinoa and buckwheat as my primary starches -- both are low-glycemic. Very occasionally brown rice. For a long time I was eating hulled barley, which I really liked, but it is not FODMAP safe so I gave it up. Am planning to try it again...

Thanks, HM, but I'm pretty sure it wasn't the sodium. LCHF actually requires me to eat more salt than other WOEs, since it's naturally diuretic. Quinoa is high on the insulin index, so I steer clear of that. Barley might be good..I'll have to try it.

Gosh Ms. Kes -- See the links below for two completely contradictory views of quinoa. Barley has gluten. Buckwheat is not a grain - it's the seed of a broadleaf plant, so less reactive for those of us who are grain sensitive. The other grain with gluten is rye.

Kes -- I'll have to find them again! Made buckwheat again tonight. It's very satisfying, but I am trying to restrict the number of servings per week, among other things because while buckwheat is lower carb, lower glycemic, it's high oxalate, which I now have to watch thanks to my kidney stone adventure. You can't win for losing.
