Interesting day. It was actually good to be back at work, because I love my coworkers and clients. And I love what I do.
The area is still in recovery from Hurricane Matthew, and yet, in many ways, so back to normal. All of my co-workers and clients escaped major damage to property. It's quite remarkable.
I've been playing with adding more carbs to my plan, as there is evidence that my insulin resistance is well on the way to recovery. And certain resistant starches make the gut bugs happy. Yesterday, I had about a half of a sweet potato's worth of fries, and it didn't kick me out of ketosis. I was surprised, a little, but the carbs were still fairly low.
So today, the salon owner brought in Chinese food for the crew. Everything was either breaded or in a sweet sauce. There was one dish, a sort of stir fry with chicken and cabbage, that was on plan...but the chicken was scarce, and the cabbage overcooked. I decided to throw caution to the wind, and had a good helping of sesame chicken. Breaded chicken in a sweet sauce. I figured that would definitely throw me out of ketosis. I checked when I got home, and to my huge surprise, I was still spilling ketones 4 hours after eating it! Wow!
However...I can feel the effects of the sugar in the sauce, and probably the flour in the breading. Headache, sleepy, and with my last client, a hyper-energy with anxiety. And I'm hungry again. I've been used to eating once a day for a couple of months, now, and this hunger is bordering on craving. I want a donut. I want a plate of pasta. Yep, I know. It's the sugar demon calling its minions to take me down. NOT. GOING. TO. HAPPEN!!!
But, on the positive side, it means that I can ease up a little on the carb restriction.
As I move into the last phase of my weight loss, I'm going to stay mostly LCHF, but add in Paleo foods up to my carb/insulin tolerances.
If you're LCHF/insulin resistant, I highly recommend that you google "Insulin index". It's brand new science, and kind of turns the glycemic index on its head, in some ways.
As a side note, I have to say that the hurricane and the recovery efforts, once again, make me SO glad to be living in the South. Neighbors helping neighbors, communities banding together to provide for their members who were hardest hit, surrounding states sending power crews to get the power restored.....churches, organizations and individuals setting up food sharing programs. With all the bad news you see on TV, it warms the heart to see, up close and personal, how people take care of one another in times of need. There are a LOT more good people in the world, than bad.

Will definitely research Insulin Index. Glad you had a first day back. So, am I hearing you right? Chinese food created more cravings than Hurricane Matthew?

A really uplifting post. I've always been impressed by the can do, helpful spirit we exhibit when people need help. Your neighborhood/area sounds terrific. I'm going to be interested in your journey as you add back some carbs. I know it's way too soon for me, but I'm looking forward to the day down the road. Healing is a wonderful thing.

Kes, good luck with it all. Back to work is always an attitude adjustment. Sounds like you are doing well with it. It is good to see friends again. Hoe the diet works for you, and everyone adjusts to cleaning up after the storm. Good luck!

I did a little checking on insulin index, interesting. I must delve a little further. Glad you are back to doing what you love with people you enjoy. I live in a rural community where neighbors help each other and expect nothing in return. Good people!

@Lady, yes! Much worse! The nervous craving were in my head. These cravings are from my body. I satisfied them, somewhat by making teriyaki chicken wings tonight for dinner. It will be interesting to see what non-sugar-free sauce does to my macros for the day. and the ketostix tomorrow.

@Sue, I've been in a few natural disasters over the years, including a 6.8 earthquake in Ecuador. We really do band together in times of need. It's a shame that once the danger is past, the predators come out to play. There have been reports of people price gouging for tree removal, bottled water, and other essentials in the last couple of days. :( It reminds me of a certain someone around here.

Nice post Kes. You substantiate my belief that mankind is inherently good. We just have to look at each other using the right perspective. I understand the whole Diogenes thing, I just don't agree with it. Hardships often bring out the best in us.

@ Warren, thank you. We are a resilient people here in the Southeast. The diet is an ongoing experiment of discovery, editing, research, editing, frustration, editing... LOL. Somehow, the more you know, the more you discover that there is more to know. You know?

Keep us posted on how it is going with increasing carbs. While I am not quite there yet, I know it won't be much longer for me either. Finding I am at a plateau of sorts and need to change things up. want to wait for my next A1C test to see how that is, but if still in the normal range, will try increasing carbs. I am going to look into the insulin index as well. Glad you are back to work and all is getting back to normal!

Well put. Once you've got things figured out, conditions change; appetite changes; mood changes; resources change; your body changes; your motivation changes. It requires constant attention and action. Well, we're on a journey here together, helping each other out. Some of us just have branches down in the yard, some of us are fighting for our lives in deep flood water. One day at a time, we're trying to put things right. You're right, Erika. The changes you mentioned are just a reinforcement of the idea that there is no, "One-size-fits-all" diet! And your analogy of the storm damage and diet damage is on point. This community has come together to support each other, time and time again.
