Arg! I am a terrible cook. I am really trying to mix things up to keep me on track - so I don't get bored with the food choices, you know? The internet has some really neat low-carb recipes but I botch it almost every time. This is why I tend to grab the polish sausage, cheese, and pickles at the grocery store. Quick, easy, and the food does not need to be subjected to my creativity.
That's my rant. Waste of time, waste of money. So disappointed.

Keep trying. It's worth it when something finally works. Usually, though, I eat the same old stuff all the time. I made these biscuits that weren't biscuits at all, but some kind of cocunut flavored quiche. Then I made almond bread and it was more quiche. Then I made almond bread again, ah, heaven ☺

The low carb baking is usually a disappointment to me. I do better keeping it simple with veggies, meat and cheese.

Thanks for the comments. I have discovered some tomatillo guacamole salsa and guacamole and tomato dip at Costco. I am now stuck on this for my main meal/lunch - chicken breast, guac, dollop of sour cream - maybe some melted cheese - more often no cheese at all. Very tasty. I am also riding the coconut oil train. Dairy tends to stall me lately. *sad face* I love melty cheese.

Guacamole sounds good. I think dairy is stalling me as well. I hate to admit it.

Dairy and nuts are my danger items. I made the mistake of bringing a bag of almonds to work last week. Ended up snacking on them all day.
