I am consistently eating between 500-1000 calories below my maintentance weight PLUS working out and my weight is staying same.

probably becausee at first your body is "producing" new muscles (which weight) and is at the meantime throwing out the excesses of water, gas ad other futile stuff to your body. so if you keep on, once you've got more muscular tissue and less water&co in your system you'll begin to see that the scale isn't really making fun of yoy!!!
