Veggie me!
Burger (yellow beets, quinoa and beans etc.) on rye, whole wheat and hempseed bread, finely sliced red and white cabbage (used mandoline) and dressed with apple cider vinegar and pumpkin seeds. Oh yeah and raw spinach, grilled eggplant with a few pine nuts, garlic, parsley and lemon juice.

I made about 10 patties on sunday About 5 left. If you have a mandolin, you can get the cabbage super thin. I have a cast iron grill pan with ridges, to grill vegetables. They keep in the fridge for days.
