Rckc's Journal, 19 May 2016

Today is my 2nd low day of the week on 5:2. I used my spiralizer on zucchini, threw in some turkey, a little cream, cheese, and garlic. Very good AND I have calories left in case I want a little snack!

I love using zucchini and summer squash as "pasta". I don't think it really has much taste to itself but it's the texture I love. KP, sorry no. Didn't save even a little. Tilted the plate and slurped up the sauce. Did stop short of licking the plate tho, lol! You can't take me anywhere, haha

That looks wonderful, I love your dishes! I have a spiralizer too, love that thing. When we have spaghetti, I make my own "noodles" so I cat eat with the family and not feel left out 🙂

Jess, funny thing about the plate.... Husband is gone during the week so it's just me. I usually use paper plates but since I was taking a pic and all I thought, don't be a heathen Kim, get out a real plate! Hahahahahaha

Ha Ha! That looks AWESOME!!! Well done. I will have to get some tips from you on how to stay within .... is it 500 calories on the fast days?

yep, 500 cals two days a week. I've chosen Monday and Thursday. I tend to be a "volume" eater which is why I usually save most of my calories til evening. On my low days I plan on eating veggies and a lot of them, just like the above meal. I also had some cheese crisps for a snack and stayed under 500! yay!

Well done. I know Draglist will have coconut oil during the day to keep from getting hungry.
