I almost had to starve today to have this delicious dinner. What you see is lamb shanks in red wine sauce over mashed potatoes (and yes, I measured❤️)

I'm gonna take a fibre capsule and pretend I'm full from eating your lamb. Plus, 2 BIG scoops of those potatoes. YUM!!

Thanks y’all😎. KathieO, you made me laugh about the fibre capsule! Typically, I would have strained the veg sauce so it would be silky smooth but I figured I’d go for fibre rather than trying to make the plating prettier😁. For those who love mash potatoes as much as I do- I limited myself to exactly 1-cup (and it wasn’t easy to hold back from seconds!)
