Good dinner. I got out my electronic pressure cooker--a cool item that I made lot of use of when I cooked for my diabetic MIL before she passed away. I haven't used it as much lately because everyone goes a different direction. But South Beach encourages making your own soups, bean dishes, etc. so I pulled it out and made lentils with lots of veggies and chicken. Turned out great. My husband snagged some and he loved it, too.

I can't wait to move to phase 2 and make pressure cooker apples. They are like the apples from Boston Market but all that is in them in cinnamon (and a bit of water). No extra sugar or anything. I'm going to mess with some blueberries in the pressure cooker, too
