Day 8 - and I'm loving it!

However, been so busy lately that my diet has been slipping. Went shopping last night and got some fresh asparagus and salmon for dinner tonight with wild frozen blueberries for desert. Now this is how I like to eat!

I love my asparagus and I have to agree that this type of eating is easy to get accustomed to. I have been doing a lot of Oven fried stuff lately with crushed pork skins and it has been great. I coat the meat with mayo then the crushed skins and bake. Don't even have to flip the meat over!

I used Tilapia the first night which were really thick fillets from Sams Club and last night I just used some chicken leg quarters with skin and bone. My 4 year old gobbled down the leg like she was starved and she is a super picky eater which drives me crazy at dinner! I baked the fish at 450 and the chicken at 400. They were very moist inside too! Oh, and I used the seasoned salt but next time I will have to use less on the chicken. I used a tablespoon in the crushed pork skins and it was a tad salty for our tastes as we limit the salt due to high BP.

Ruth - Then I'll be thinking of you as I eat! I am lucky that I like (most) vegetables. I have to hide them in cheese sauce, soup, etc. for DH to enjoy - but at least I get some into him.

Rainshine - I will try that fish. I bet this recipe will keep the fish from drying out (as I have a tendency to do).

OMG Buffy you sound like me. Micky eats pretty healthy except for not loving any vegetables unless they are doctored up with cheese or cream sauce or beef gravy. Ha! You menu sounds delish! I had to give up the pork skins on anything. I retain too much fluid when I eat them. I get cankles. LOL!

Mom - Would there be that much pork skins on a fish? I am still nervous about eating them because I wonder about the oil that they cook them in - re-used & super heated oil forms trans fats. But anyway, I just ate half a pound of asparagus and would have eaten more. There will be no water retention tonight - LOL.

I eat pork skins all the time, they are a staple in my house and perfect for this diet. The oil is not so much problem as the salt. Just like with regular chips, they are loaded with salt. This would explain why mom retains fluid after consuming them. Some people are much more sensitive to water retention than others from salt because the kidneys have to work harder. I do suggest maybe not adding the seasoned salt like I did because it just adds more salt to an already salty item.
