What a wonderful holiday we had. I really needed a few days of a FS break and the timing was perfect. I will say however that the time I spent pre-feast planning was worth it. I entered all the recipes I was preparing in my cookbook. I did many revisions to our family favorites to lean them up a bit without losing the flavor and then followed and revised as I was preparing them. I knew I was looking at about a 3000 calorie day which I was fine with. I then went a couple of days before and after with a good decrease in my normal calorie intake. I think it worked well for me. I did not get my regular exercise in but compensated for that in other ways. For me it was all about the plan since special occasions and holidays will come every year.
I even made a couple of my hubby's post holiday favorites... a Turkey Panini made with sourdough bread, turkey, cranberry, brie and fresh spinach leaves. The other is Turkey Suiza Enchiladas which we are having for dinner with blackbeans and salad. Made turkey stock with all the left over bones and froze 6 quarts of that to use in my homemade soups this winter. Believe me, nothing from that 20 lb turkey went unused!
So now, taking in some football, finishing up the 5 loads of laundry and thinking about getting back to the office tomorrow after the week off.
Hope you all had a wonderful holiday with your families and friends, now let's get back in the saddle and gear up for Christmas which is actually right around the corner.
