I have my young friend, the GENERAL— the marathon runner, and her best friend (also a runner) today in the afternoon while their parents get out a bit for adult time. we are going to the track for them to click off a quick 5 miles and then to the nice warm pool to play. I am making apple ring “Samoa’s” for a snack. Spread finely shredded coconut on a cookie sheet and toast in the oven at 350 for about 8-10 min. Let cool completely (I do this ahead of time) Meantime slice gala, honey crisp or Fuji apples to create rings. Either core the apple before or after you slice, your choice. Spread apple slices with peanut butter and top with the toasted coconut pressing it in to the nut butter. Drizzle very lightly with melted dark chocolate. They love this. Dinner will be my vegetarian pita pizza bar with homemade lower sodium marinara sauce and a salad of shredded brussel sprouts, pomegranate seeds, pecans and a dressing made with sherry vinegar, a light touch of pomegranate molasses and olive oil. This is a favorite meal for them. Then it will be rime to slay them playing Phase 10.
