Directions
- Combine zucchini, margarine, garlic, salt and pepper in a saucepan with water at medium heat. Cover and let simmer for 1 minute.
- Uncover and continue to let cook for 5 minutes or until zucchini is tender, stirring occasionally. Remove from heat.
- Add parmesan cheese and serve.

Tastes great! I made this with butter (since I'm on Atkins and can have butter) and it was delish! Just don't overcook zucchini like I did :-)

I made this using olive oil (~ 1-1/2 Tbsp) instead of margarine or butter, I used also I used little more garlic (5 or 6 cloves instead of 2). Otherwise I followed the recipe as directed. My family loved it! It's very quick, healthful (for how many calories it has it has a substantial amount of protein), and filling. I would definitely make this again.

I also used butter and tossed in some Chili Powder and it was really great!!

This is the best way I've ever had zucchini! Will make again for sure. I tweaked and made with butter instead of ff margarine. The inclusion of butter or margarine (tho I'm partial to butter since I'm on Atkins) helps the parmesan to stick really good to the zucchini.

I thought this dish was delicious! I used butter since I'm on the Atkins :) also garlic gave it a wonderful taste with the parmesan cheese. I cut the zucchini into pieces like zucchini sticks..Ohh so good and very easy to make.
