Zucchini Bread

A different way to use zucchini.

Ingredients

Directions

  1. Clean and grate enough zucchini to make 3 cups, leave skin on.
  2. Combine flour, cinnamon, baking soda, baking powder and salt. Set aside.
  3. In mixer bowl combine eggs, brown sugar, apple sauce and vanilla extract.
  4. Add flour mixture to wet ingredients and beat well.
  5. Add zucchini and raisins and combine well.
  6. Use baking spray on mini loaf pan and scoop batter into pan.
  7. Bake at 325 °F (165 °C) for 30 minutes.
  8. Cool in pan for 20 minutes. Turn out loaves and allow to cool.
