Wisconsin Cheese Soup

A cheesy, peppery soup.

Ingredients

Directions

  1. In a small saucepan over medium-high heat, combine celery, bell pepper and chicken broth. Bring to a boil. Cover, reduce heat and simmer for five minutes. Remove from heat and set aside.
  2. In a large saucepan, cook onion in butter over medium heat until onion is translucent. Stir in pepper, salt and cream.
  3. Bring to a boil, then stir in cheese until melted.
  4. Stir in reserved vegetables and cooking liquid.
  5. Heat through and serve.
  6. Note: if thicker consistency is desired, add one or two egg yolks and simmer an additional 10-20 minutes.

I just made this soup this afternoon. It is awesome and full of great flavors. I have been getting caught up on bland food. This is just what I needed. I added 1/4 of cooked bacon for flavor and taste. Sooooo good! Thanks for the recipe!

it's not helpful to have other dieters making negative comments when the recipe is OBVIOUSLY for Atkins.

I am SO sick of people rating recipes for Atkins when they are NOT on Atkins! It just annoys me...this recipe is for ATKINS! haha anyways this looks like a wonderful recipe that I will definitely try!!!
