Directions
- Sauté 1/2 onion in cooking spray, like Pam.
- Peel and seed butternut squash, cut into 1" cubes.
- Add 6 cups chicken stock, boil until squash is soft.
- Blend with a blender until smooth.
- Add salt, pepper and nutmeg to taste.
