Vegetable Soup with Pistou

Delicious recipe from the Marseille area in the South of France. Lots of vegetables in a fragrant basil infused broth.

Directions

  1. Boil 2 litres of water in a heavy based saucepan (or "cocotte"). Meanwhile, clean the vegetables, chop 3 tomatoes and the zucchinis and cut the ends off the green beans.
  2. Salt the water and put the prepared vegetables in. Cook for about 30-35 minutes and add the spaghetti. Meanwhile, blend 1 tomato with 1 bunch of basil, the garlic and the olive oil.
  3. When the spaghetti is cooked, take off the heat and stir in the tomato-basil mix. Serve and enjoy.
