Vegetable Minestrone Soup

A tasty and healthy vegetable based soup, to be made in a slow cooker.

Ingredients

Directions

  1. Mix all ingredients except rice and basil in a 3 1/2 to 6 quart slow cooker.
  2. Cover and cook on low heat setting for 6 to 8 hours or until vegetables are tender.
  3. Stir in rice and basil. (Note, if you are not using instant rice, cook the rice first as per package directions.)
  4. Cover and cook on low heat setting for about 15 minutes or until rice is tender.

I've made a similar recipe. I don't use the marjoram, tomatoes, cabbage, rice and basil but I add rosemary and frozen peas. Be aware, you can use frozen veggies in this, and it is awesome, especially on a cold day!
