Turkey & Vegetables Skillet
A quick, easy and low calorie turkey meal.
Ingredients
Directions
- Spray non-stick cooking spray in a large skillet.
- Brown turkey and onion over medium heat until turkey is cooked through and onion is soft, about 10 minutes.
- Add tomatoes, tomato paste and seasonings. Simmer over medium heat for 10 minutes.
- Add zucchini and cook for 5 minutes more. Serve while hot.
- Note: based on a recipe from Champions for Change.

Made it tonight. Loved it! I added a few veggies I had leftover in my fridge....asparagus and yellow peppers. Added a fresh jalapeno. Served it over brown rice. My hubby and son said it was so good it needs to become a standard on our menu. Also added cayenne pepper. Used a bit more tomato paste too.

This was not a great meal for me. I did not find it yummy nor great nor did I love it. I added a hot chili and some cayenne pepper to give it some zip, but it was missing something. Sorry, will not make this dish again, even with the low caloric nutrition.

Great dish... I recommend a little less tomato paste, adding 1/2 cup of water, and using FRESH basil that you've minced up. You can't beat this! (I like to add broccoli, too.)

I added squash, mushrooms, green peppers and more garlic. I loved it!!!!!!!! My kids and husband loved it also!!

Made this for dinner tonight...Quick and easy. My husband even liked it and he's not a fan of ground turkey! Had to add a bit of water to thin out the tomato paste, but other than that, I'll definitely keep it on the menu!!
