Tofu Scramble

An alternative to scrambled eggs loaded with vegetables and protein.

Ingredients

Directions

  1. Saute chopped onion, tofu and olives in a pan with the canola oil.
  2. Add in lightly chopped fresh spinach. Mix in until spinach wilts slightly.
  3. Mix in feta and serve.
