Sweet Potato & Apple Bake

A great healthy side dish for the cooler months of the year.

Ingredients

Directions

  1. Pre-heat oven to 375 °F (190 °C). Peel and cube sweet potatoes and apples.
  2. In separate bowl combine brown sugar, maple syrup & orange zest + juice from 1/2 of orange. Mix.
  3. Grease an 8x8" or 9x11" pan.
  4. Combine sweet potatoes and apples with brown sugar, mix well.
  5. Cover with aluminum foil. Bake at 375 °F for 30 minutes.
  6. After 30 minutes remove foil, bake additional 15 minutes. Enjoy!

Needs to bake a little longer: the sweet potatoes were still crunchy. Once we baked enough to soften them up, it was really yummy!
