Spinach Stuffed Chicken Breast
Truly delicious spinach, onion and feta stuffed chicken breasts.
Ingredients
Directions
- In a large non-stick skillet, heat olive oil; sauté onion until golden, 5 minutes.
- Wilt spinach (steam or heat damp in pan); stir in lemon zest, feta, salt and pepper. Set aside.
- Divide spinach mixture between chicken breast cutlets.
- Roll up and secure with toothpicks.
- In same skillet, heat remaining oil over medium-high heat.
- Cook chicken, turning occasionally until golden brown and cooked through, about 10 minutes.
- Remove toothpicks.

very good recipe...i had a hard time bcs i didn't pound the chicken and my cuts might have been too thick (takes longer to cook all the way through and cooking is uneven). otherwise, it was awesome.

I just made this and it was soooo yummy. but I also made a sauce for it. I put the contents of the middle of the chicken in a saucepan, added white wine, a little garlic salt and VOOALA!!! sauce and it was even YUMM...IER. HA HA

This is one of my family's new favorites!! I bought chicken filets so I didn't even have to pound them. I salt and peppered the breasts before I filled them. I would eat this once a week.

Sounds very tasty but I don't like onions so I am going to switch them with fire roasted tomatoes.

Fantastic on a baby spinach salad with vinagrette! Also, I recommend chopping up sun dried tomatoes and adding that to the filling!

Love it. Didn't have chicken breasts but I had tenderloins (smaller cut), so I made little bite sized ones using toothpicks to hold them together. Turned out really good actually.
