Spicy Zucchini Soup

Spicy food lovers will absolutely adore this stylish zucchini soup.



  1. Chop up jalapenos, onion and zucchini into quarters.
  2. In a pot, add the butter and the ingredients in step one.
  3. Fry together until butter melts and zucchini gets soft on the outside (but not too soft).
  4. Add water, then add garlic powder and salt. Bring to a boil.
  5. Once boiling, blend mixture along with cilantro in a blender.
  6. Blend thoroughly and serve alone or with crackers. Enjoy!

I like to use "Better Than Bullion" Vegetable broth instead of just water, fresh garlic cloves, and scallions instead of an onion. When I serve it, I add a dalop of fat free sour cream and a sprinkle of cilantro. Turns out delicious.

This dish is AMAZING!!! I used chicken broth instead of water and added in some heavy cream and cream cheese to give it more of a creamy texture!! I made it for dinner last night and the was barely enough for left overs today.

This was very good. I did use butter spray instead of butter and added more garlic.

This sounds very good for 5:2 at 112 Cals per serving, its ideal for a lunch, leaving enough Cals over for a decent Dinner. This is if you are having 500 Cals on fast days.
