Spaghetti Squash with Marinara Sauce

Ditch the carbs and enjoy spaghetti without the guilt.

Directions

  1. Cut squash in half and remove seeds. Scrape seeds, drizzle with olive oil and sprinkle with salt and pepper.
  2. Roast squash at 375° F (200° C) until you can insert a knife without resistance, about 35 to 45 minutes.
  3. With a fork remove squash, should look like spaghetti.
  4. Plate, pour marinara sauce over squash and add parmesan. Enjoy.

I made this recipe this week, yummy!! I did not use oil or salt either. I baked squash in oven. I seasoned some tofu with no salt Italian herbs, spay some Pam in a pan on the stove, allow tofu to brown. What a meal this was. Tofu, pasta sauce, squash and a dash of grated Parm cheese. To Die for!!!!

Love this recipe. I microwaved the squash. Cut squash lengthwise very carefully. Pierce each half a few times. Place face down in a microwavable container with about 1/4 cup of water. Cover with Saran wrap and nuke for about 5-7 minutes (depending on how large the squash is) twice, turning once after first 5-7 min session. Also, I actually didn't use any oil or salt. The Marinara sauce has plenty of salt. I used the organic tomato basil sauce they sell at Costco - yummy.

I make it with homemade ragu or meatballs and tomato sauce. I love it!
