  1. Whisk together soy flour and egg whites.
  2. Pour in lightly greased frying pan.
  3. Cook until lightly browned and flip to brown other side.
  4. Ready to serve.

I did not like this recipe. I thought that is just tasted like egg whites with flour. Nothing like a pancake. I put sugar free syrup and butter and it still didn't taste good.

I don't know if I did this right. It turned out more like slightly gritty fried egg whites rather than pancakes. It wasn't bad, but maybe I was supposed to do and will try next time is to beat the egg whites until they form soft peaks and then mix in finer ground soybeans. 3 eggs yield about 1/2 c egg white and about 1 Tb whole soybeans yielded 2 Tb ground soy flour. Maybe I'll sub vital wheat gluten for soy flour and add wheat bran for fiber.

WOW!!! I can't remember the last time I was this excited about a pancake!! These are AWESOME!! I just made one and I think I'll go make another. I eat 4 egg whites every morning and it just gets boring some days. Now I can mix it up a little bit and have one of these instead. Thank you so much!! :)
