Southwest Chicken Soup

I made this soup using leftovers from chicken tacos, which is so yummy.

Ingredients

Directions

  1. Add half of the liquid (water and broth), chicken, spices, and garlic to a pot. Simmer until the chicken is cooked all the way through.
  2. Remove chicken from broth and shred.
  3. Add the remainder of the liquid, shredded chicken, salsa, corn, and beans to the pot.
  4. Simmer for about 20 minutes to let flavors emerge.
  5. Serve with cheese sprinkled on top.
