I didn't use the olive oil or balsamic vinegar...I used balsamic vinagrette dressing (light) and I added chopped vidalia onion. It was great! I had this for lunch and am STILL full.

I really enjoyed this recipe I ate yesterday and today. The balsamic is a little overpowering so I think I'll try 2 tbsp, also for the Olive Oil I used a garlic flavored one and half of the garlic powder. It's really good, gives a good twist on Spinach.
