Roasted Cauliflower with Parmesan & Garlic

Cauliflower roasted with parmesan cheese and spices makes for a terrific side.

Ingredients

Directions

  1. Preheat oven to 400 °F (200 °C).
  2. Cut cauliflower into florets and put in a single layer in an oven-proof baking dish. Toss in the garlic.
  3. Squeeze lemon juice over cauliflower and drizzle each piece with olive oil.
  4. Sprinkle with salt and pepper. If the oven hasn't reached 400°F yet, set aside until it has.
  5. Place casserole in the hot oven, uncovered, for 25-30 minutes, or until the top is lightly brown. Test with a fork for desired doneness. Fork tines should be able to easily pierce the cauliflower.
  6. Remove from oven and sprinkle with parmesan cheese. Serve immediately.

Reviews 
I have tried my own versions of this roasted cauliflower recipe, and all have been very tasty. However, I have found that 400 degrees in my oven results in cauliflower that is overly browned (which my husband dislikes) and not done enough (I don't want it mushy, just sweet and tender). I roasted the last batch at 350 degrees for about 35-40 minutes, and it was perfect! A little brown, and more tender.

I put all the ingredients in a plastic bag and mixed it up that way. I only used one tbsp of olive oil and some of that stayed in the bag when I was done.

This is my husband's favorite vegetable dish. I usually add additional garlic, and sometimes a bit of oregano too. So quick and easy for a weeknight meal.
