Pressure Cooker Swiss Steak and Rice

A classic favorite made fast and simple. Steak with fresh vegetables, smothered in a tomato sauce and combined with rice.

  1. Spray an iron skillet or non stick skillet with non stick cooking spray and brown steaks on both sides, remove from skillet and set aside. Layer sliced onions and peppers in the bottom of pressure cooker. Slice the steaks into thin strips and add to cooker.
  2. Add remaining ingredients in the following order. Drained and rinsed green beans, rice, mushrooms, tomatoes, minced garlic, minced onion, water and seasonings. Cover and set on high pressure for 25 minutes.
  3. Recipe yields 8 - 1 cup servings.
