High fiber raisin bran muffins, great to freeze and eat every morning.
Ingredients
Directions
- Pre-heat oven to 400 °F (200 °C).
- Mix together the all-purpose flour, baking powder, cinnamon and salt.
- Pour milk over raisin bran, let stand to get soft (5-8 minutes), stir in eggs, honey and butter.
- Add dry ingredients and stir until well mixed (about 2 minutes with electric mixer on medium.)
- Spoon batter into muffin cups, makes about 18.
- Bake for 18-20 minutes or until golden brown.

The way I made this recipe is pretty basic, you could always add nuts, more raisins, cranberries, it all sounds good.
