Potato and Leek Soup
Hearty winter soup that's very filling.
Ingredients
Directions
- Heat olive oil in a pot. Cook onions and leeks for 5 minutes, or until glassy.
- Add potatoes and stock. Bring to the boil.
- Reduce heat, cover and simmer for 20 minutes, or until potato is soft.
- Blend. Season with salt and pepper.
- Garnish with chives.
