This was a winner dinner! Everyone in my family loved this, right down to my 3 year old. I added some mushrooms to the recipe and I did have to cook it a little longer, about 15 minutes. I didn't know if the meat was done and didn't want to make anyone sick, I need a meat thermometer. I loved the way my house smelled while it was cooking. Thanks for the great recipe and it was well balanced with carbs, calories, fat, and high in protein!

The red wine makes the pork purple, I used a cheap white with earthy flavors and it worked just as well. I also add mushrooms to mine and use a lot more wine and an extra packet of gravy mix as I love sauce.

ps--I also had to cook it a little longer, based on the meat thermometer & the color of the meat when I sliced into it after 45 minutes, but sooo worth it!

De-lish and super tender. I had a larger roast so estimate 30 minutes a pound to 170 temp. I added mushrooms too which really made the meal!

My houses smelled amazing while I was cooking it both my husband and I were salavating. The meat tasted even better. I made some red skin potatoes to compliment the meal as a side as well as some as some asparagus.
