Delicious mini pizzas using muffin pans.
Ingredients
Directions
- Pre-heat oven to 375° F (190° C). Grease a 24-cup mini-muffin pan.
- In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes (if using) ; whisk in the milk and egg.
- Stir in the mozzarella, parmesan and pepperoni; let stand for 10 minutes.
- Stir the batter and divide among the mini-muffin cups.
- Bake until puffed and golden, 20 to 25 minutes.
- Meanwhile, microwave the pizza sauce until warmed through.
- Serve the puffs with the pizza sauce for dipping.

WOW! This is fantastic, even my husband loved this receipe, and he is very picky. I did substitute Carblite in the receipe, just because we really have to watch the carbs. I got the carbs down to 0.8, and the calories down to 101.
Their is so much you can do with this receipe, like using sausage, bacon bits, taco meat, ham etc....

Good recipe once you figure out the baking powder and italian seasonings measurements. Definitely much better served hot or warm. I used ham instead of pepperoni. Everyone seem to enjoy at the party I brought them too.
