Parmesan Crusted Zucchini II

You won't have to worry about any leftovers with these.



  1. Pre- heat broiler and adjust the rack so it's 6" away from heat.
  2. Fill a medium pot with water and add a generous amount of salt, bring to boil.
  3. Wash the zucchini and cut into strips about 3" long and 1/2" thick.
  4. Add zucchini to water and cook until barely tender (3-4 minutes).
  5. Drain zucchini and plunge into ice water to stop the cooking, then drain in a colander for about 2-3 minutes.
  6. Spray broiling pan with non-stick spray. Arrange zucchini on broiling pan in rows, close together, skin side down.
  7. Brush zucchini with melted butter and sprinkle parmesan cheese over the zucchini, try to get most of it covered.
  8. Place under broiler and cook until cheese is completely melted and well-browned. Takes about 15 minutes. Enjoy.

yum! I might make it with olive oil though! :)

Exchange olive oil for the butter. It still has good flavor, and is much healthier. South Beach goes for low-fat cheese, but some of it tastes pretty bland. I think if you change the butter it will be fine. I haven't tried it yet, but I intend to.

I had these for dinner tonight and they were excellent!! I used both zucchini and yellow squash. A couple of mistakes I made allow the way: 1.) I forgot to pre-heat the broiler so they took around 10 minutes longer; 2.) I did not put the spears close enough together to maximize the parmesan cheese coveraqe.
