Pancetta Wrapped Asparagus Spears
A great Atkins side-dish or appetizer.
Ingredients
Directions
- Pre-heat oven to 350 °F (175 °C).
- Spread olive oil on the bottom of a small baking pan. Cut off the tough part of each asparagus spear.
- Wrap each asparagus spear with a 3-4" wide slice of pancetta sliced very thinly and place them in one layer in the baking pan.
- Bake for 15-25 minutes or until pancetta is a little crispy.
- Enjoy!
