Pancetta Wrapped Asparagus Spears

A great Atkins side-dish or appetizer.

Directions

  1. Pre-heat oven to 350 °F (175 °C).
  2. Spread olive oil on the bottom of a small baking pan. Cut off the tough part of each asparagus spear.
  3. Wrap each asparagus spear with a 3-4" wide slice of pancetta sliced very thinly and place them in one layer in the baking pan.
  4. Bake for 15-25 minutes or until pancetta is a little crispy.
  5. Enjoy!
